This week at InMon station alpha, Thanksgiving! Turkey never really got me excited but there will be pie. Gratitude is a big factor in happiness, so I hope you all take a moment to remember what you’re grateful for, no matter what country you’re from. I also hope you can eat some pie.

  1. 1 unbaked pie shell
    1 cup raw grated pumpkin
    2 cups top milk (or half-and-half)
    1 cup sugar
    1/4 tsp salt
    1/4 tsp cinnamon
    1/8 tsp mace
    3 eggs

    Beat eggs, add sugar and spices. Beat until smooth. Add milk and pumpkin. Pour mixture into unbaked pie shell. Bake 10 minutes at 400, then reduce to 325 and bake until pie is firm.

    So. Tasty. I have quite a list of people who don’t like pumpkin pie who like this pie. ^_^
